We’re looking for a skilled and driven 1st Cook to join our Kitchen team – someone who brings consistency, precision, and passion to every plate.
What You’ll Do
As a 1st Cook at Mona Verde, you’ll play a key role in delivering high-quality dishes with consistency and attention to detail. You’ll support kitchen operations, ensure standards are met, and contribute to a dynamic and efficient service.
Your Main Responsibilities
Food Preparation & Execution
Prepare and cook dishes according to established recipes and standards.
Ensure consistency in taste, presentation, and portioning across all services.
Support different sections of the kitchen as required.
Kitchen Operations
Work closely with the Head Chef and Sous Chef to ensure smooth service flow.
Assist in organizing and maintaining your section for optimal efficiency.
Ensure all mise en place is completed before service.
Menu Knowledge & Standards
Maintain a strong understanding of the menu, ingredients, and preparation techniques.
Follow all recipes and plating guidelines precisely.
Adapt to menu updates and seasonal changes as required.
Quality Control
Ensure all dishes leaving the kitchen meet Mona Verde quality standards.
Monitor food quality, freshness, and presentation at all times.
Assist in minimizing waste and optimizing ingredient usage.
Food Safety & Hygiene
Strictly follow HACCP procedures and food safety regulations.
Maintain cleanliness and organization of your workstation at all times.
Ensure proper storage, labeling, and rotation of ingredients.
Time Management & Service Flow
Work efficiently under pressure during service.
Ensure timely preparation and delivery of dishes in coordination with the team.
Maintain focus and consistency during high-volume periods.
Teamwork & Communication
Communicate effectively with kitchen and front-of-house teams.
Support colleagues and contribute to a positive working environment.
Attend briefings and follow instructions from senior kitchen staff.
Stock & Organization
Assist with stock control, deliveries, and storage.
Ensure your section is always well-organized and fully stocked.
Report shortages or issues promptly.
Setup & Clean-down
Participate in daily kitchen setup and closing procedures.
Ensure all equipment and work areas are clean and properly maintained.
Follow all cleaning schedules and standards.
Brand Representation
Uphold the Mona Verde standards in every aspect of your work.
Demonstrate professionalism, consistency, and attention to detail.
Contribute to a strong, disciplined, and motivated kitchen culture.
What We’re Looking For
Previous experience as a 1st Cook or strong experience as a line cook in a busy kitchen.
Solid knowledge of cooking techniques, ingredients, and kitchen operations.
Understanding of food safety and hygiene standards (HACCP).
Ability to work under pressure in a fast-paced environment.
Strong team spirit, reliability, and attention to detail.
Professional attitude and willingness to learn and grow.
Availability to work flexible hours, including evenings and weekends.
