What You’ll Do

As a Head Cook responsible for both kitchen operations and copa, you’ll manage the entire back-of-house independently. From preparing dishes to maintaining cleanliness and organization, you’ll ensure the kitchen runs smoothly, efficiently, and to a high standard at all times. This role requires strong multitasking, responsibility, and pride in both food quality and hygiene.

Your Main Responsibilities
Food Preparation & Cooking

Prepare and cook menu items consistently, following recipes, portioning, and presentation standards.
Ensure all dishes are delivered with quality, accuracy, and within service timing expectations.
Manage prep work efficiently to support a smooth service flow.

Kitchen & Copa Management

Take full responsibility for both cooking and dishwashing (copa) duties.
Wash, dry, and organize all kitchen equipment, utensils, and dishes during and after service.
Maintain a constant flow between cooking and cleaning to avoid delays or shortages.

Menu Knowledge & Execution

Understand all menu items, ingredients, and preparation methods.
Be aware of allergens and dietary requirements, ensuring safe and accurate food preparation.
Stay updated on any menu changes or specials.

Hygiene, Safety & Compliance

Follow HACCP and all food safety regulations strictly.
Maintain high standards of cleanliness across the entire kitchen and washing area.
Ensure proper food storage, labeling, and stock rotation (FIFO).

Management & Organization

Handle multiple responsibilities simultaneously, balancing cooking and cleaning tasks efficiently.
Prioritize orders during busy periods while maintaining consistency and quality.
Keep the kitchen organized, stocked, and ready for continuous service.

Stock Control & Preparation

Monitor ingredient levels and communicate shortages in advance.
Assist with receiving and organizing deliveries.
Prepare ingredients ahead of service (mise en place) to ensure readiness.

Equipment & Workspace Maintenance

Ensure all kitchen equipment is used correctly and kept in good condition.
Report any malfunctions or maintenance needs promptly.
Keep all workstations clean, organized, and functional throughout service.

Team Coordination (Front of House)

Communicate clearly with front-of-house staff regarding order timing, availability, or delays.
Ensure special requests, allergies, and modifications are handled accurately.

Setup & Closing Duties

Prepare the kitchen before service, ensuring all ingredients and tools are ready.
Complete full clean-down after service, including kitchen surfaces, equipment, and dishwashing area.
Leave the kitchen fully organized and compliant with hygiene standards.

Accountability & Independence

Work independently with a high level of responsibility and initiative.
Maintain consistency and standards without direct supervision.
Take ownership of the kitchen’s performance, cleanliness, and efficiency.

What We’re Looking For

Previous experience as a cook in a fast-paced kitchen environment.
Ability to manage both cooking and cleaning responsibilities independently.
Strong understanding of food safety, hygiene, and kitchen organization.
Good time management and multitasking skills.
Reliable, responsible, and able to work under pressure.
Attention to detail and commitment to quality.
Availability to work flexible hours, including evenings and weekends.

Pagamento: 1 400,00€ - 1 600,00€ por mês
